Tall Dark Ranger Cookies

Now that Jinna's opened her tea shop in Fortune's Fool, I'm pleased to begin sharing some of the recipes that make cameos in the books.
While this particular recipe won't appear until the upcoming Errant novel Fortune & Glory, I believe times call for this regional favorite. A comfort cookie that blends crunch and chewiness to perfection, it seems like everyone’s mom had a version of the Ranger cookie. Jinna's version is adapted from tastesbetterfromscratch.com 


1 cup sugar
1 cup brown sugar
1 cup butter, softened
2 eggs
1 tsp baking soda
1/2 tsp baking powder
pinch of salt
1 tsp vanilla
2 cups old fashioned oats
2 cups corn flakes
2 cups flour
6 oz dark chocolate chips
1/2 cup raisins 


Pre-heat oven to 350º F

In a large bowl, cream the butter and sugars to gether. Add eggs and vanlla and mix until incorporated. 

Add flour, baking powder, salt, and oats and still well to combine. 

Fold in corn flakes, chocolate chips, and raisins. 

Spoon large tablespoons of dough onto a parchment-paper-lined baking sheet. 

Bake at 350º F for 12 minutes.

Enjoy with a book and a nice cuppa.
